In the period 1995-2000, some 4500 asparagus plants were bedded, and another 4000 in 2003. The first harvest was brought in 1997, and by now we can annually harvest 1000 kg of asparagus. Primarily this includes green asparagus, which is preferred by most Swedes. However, we also harvest several kilograms of white asparagus every day.
The first asparagus can be seen around the 5th of May, when their heads begin to stick through the earth. The harvest continues until June 20th, when we stop harvesting to give the plants a chance to recover. During weekends in harvest time the restaurant has a special asparagus menu on offer.
